WHAT IS FREEZE-DRYING?

Freeze-drying is the process of dehydration by sublimation, in this process the water contained in the products that are being freeze-dried passes directly from the solid to the gaseous state – without going through the liquid state. The main advantage of freeze-drying over conventional dehydration (by heating) is the maintenance of all the characteristics and properties, physical and nutritional structures of the product, that is, only the water is removed, which is why it is called the noble dehydration process.

Freeze-dried products can be preserved and stored without the need for any type of preservatives or low temperature, just add water and it will have all its characteristics untouched. To freeze-dry any product, it is necessary to develop a Freeze-drying Protocol that varies according to its composition and its molecular structure. The process in general terms is easy to understand, first, the product is frozen until the water in it is completely frozen (matured), then the product is placed in a vacuum chamber until the water is sublime, that is, go from solid state directly to gas. Depending on the case, it is possible to add heating in the equipment controlled by Auto-PID to speed up the process.
